Preparation
- Preheat your oven to 200°F (93°C) to keep the schnitzels warm as you fry them.
- Place each chicken breast between two pieces of plastic wrap or parchment paper and gently pound them to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt and pepper.
- Set up a breading station: Place flour in one shallow dish, beat the eggs in a second dish, and place breadcrumbs in a third dish.
Cooking
- Dredge each chicken breast in flour, shaking off any excess, then dip in the beaten eggs, and finally coat with breadcrumbs.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
- Carefully add the breaded chicken breasts to the hot oil and fry for about 3-4 minutes on each side, or until golden brown and cooked through.
- Transfer the cooked schnitzels to a paper towel-lined plate to drain excess oil, then keep them warm in the oven while frying the remaining pieces.
Serving
- Serve the chicken schnitzel with lemon wedges, allowing your guests to squeeze fresh juice for extra flavor.
Notes
For extra flavor, consider marinating the chicken beforehand. You can also bake the schnitzels at 400°F (200°C) for about 20 minutes for a healthier option.
