  • 1 onion, chopped
  • Cooked chicken, shredded Rotisserie chicken works well

Preparation
  1. In a skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until they soften and become fragrant.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer.
  4. Stir in the heavy cream, followed by the Italian seasoning, salt, and pepper.
  5. Allow the sauce to thicken for about five minutes, stirring occasionally to prevent sticking.
  6. Add in the shredded chicken, ensuring it is well-coated with the sauce.
  7. Serve the chicken sauce over your choice of pasta, rice, or even as a topping for baked potatoes.

Notes

For variations, consider adding spinach, mushrooms, or bell peppers. To lighten the sauce, use half-and-half or low-fat milk.
