  • 4 cups Chicken, shredded or chopped Leftover or rotisserie chicken works well.
  • 1 cup Grapes, halved Red grapes for sweetness or green for tang.
  • 1 cup Celery, chopped Provides crunch.
  • 1/2 cup Dried cranberries Can substitute with raisins, chopped apricots, or fresh pomegranate seeds.
  • 1/2 cup Roasted pecans Can substitute with almonds, walnuts, or sunflower seeds.
  • 1 cup Mayonnaise Can substitute with Greek yogurt.
  • Salt & Pepper Essential seasonings.
  • Celery leaves (optional) Adds flavor if available.

Method
 

Preparation
  1. Prep your chicken: Shred rotisserie chicken or cook chicken breast from scratch.
  2. Prep the other ingredients: Chop celery, halve grapes, and toast pecans if using.
  3. Make the dressing: Mix mayonnaise (or Greek yogurt) with salt and pepper, and optional Dijon mustard or lemon juice.
Assembly
  1. Combine chicken, celery, grapes, cranberries, and toasted pecans in a large mixing bowl.
  2. Pour dressing over the salad and stir gently to coat without over-mixing.
Chill
  1. Cover the salad and refrigerate for at least 30 minutes before serving.

Notes

This salad can be customized with various nuts and dressings. It stores well in the fridge for up to 3 days.
