  • 2 cups cooked chicken, shredded Can use leftover rotisserie chicken
  • 1/2 cup mayonnaise Can substitute with Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon Dijon mustard
  • to taste salt and pepper Season according to preference
For Assembling
  • to taste lettuce leaves Any variety of lettuce works
  • 2-4 slices bread of choice Whole wheat, baguette, or croissant recommended

Preparation
  1. In a large bowl, combine the shredded chicken, mayonnaise, diced celery, diced red onion, and Dijon mustard. Mix well until everything is coated evenly.
  2. Next, season your mixture with salt and pepper according to your taste preference.
Assembly
  1. On a slice of your bread of choice, place a few lettuce leaves to create a base.
  2. Spread a generous amount of the chicken salad mixture on top of the lettuce.
  3. Top with another slice of bread. Cut the sandwich in half for ease of eating, and serve immediately.
