For the Sandwich
  • 2 slices slices of bread (your choice) Use whatever bread you have on hand.
  • 1 cup cooked chicken, shredded Leftover chicken works well.
  • 1/4 cup pesto sauce Store-bought or homemade.
  • 1/2 cup mozzarella cheese, shredded For creaminess and richness.
  • to taste Salt and pepper
  • to taste Fresh basil leaves (optional) For added flavor.
  • to taste Olive oil or butter For grilling.

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with pesto sauce, salt, and pepper until well combined.
  2. Preheat a skillet or pan over medium heat.
  3. Spread the chicken mixture on one slice of bread, layer with mozzarella cheese, and top with another slice of bread.
  4. Brush the outer sides of the sandwich with olive oil or butter.
Cooking
  1. Place the sandwich in the skillet and grill it for about 3-4 minutes on each side.
  2. Grill until both sides are golden brown and the cheese has melted.
  3. Remove the sandwich from the skillet, slice it in half, and serve hot.

Notes

For a healthier option, use whole-grain or gluten-free bread. You can add sliced tomatoes or spinach for extra flavor. If short on time, use rotisserie chicken.
