Ingredients

For the Chicken
  • 4 pieces chicken breasts (boneless, skinless)
For the Marinade
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh herbs for garnish (like parsley or cilantro)

Method

Preparation
  1. Start by washing and patting dry the chicken breasts. Place them in a bowl or a zip-top bag for marinating.
Marinating
  1. In a separate bowl, mix together the olive oil, lemon juice, garlic powder, onion powder, paprika, oregano, salt, and black pepper.
  2. Pour the marinade over the chicken, ensuring each piece is well coated. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
Cooking
  1. Preheat your grill or oven. If using a grill, cook the chicken on medium heat for about 6-7 minutes per side.
  2. For oven baking, preheat to 375°F (190°C) and bake for 25-30 minutes, or until fully cooked (165°F internally).
Serving
  1. Once cooked, allow the chicken to rest for 5 minutes before slicing. This helps retain the juices, resulting in tender, flavorful pieces.

Notes

Consider experimenting with different spices or protein options to adjust to your diet. Cook extra chicken pieces for meal prep and store for easy access.
