- In a large skillet, heat the vegetable oil over medium-high heat.
- Season the chicken thighs with salt, pepper, and garlic powder.
- Brown the chicken on both sides for about 5-7 minutes each. Remove and set aside.
- In the same skillet, add the diced onion and cook until translucent.
- Stir in the paprika and cook for another minute.
- Return the chicken to the skillet and add the chicken broth. If using, add the sliced bell pepper.
- Bring to a gentle simmer, cover, and cook for about 30-40 minutes until the chicken is cooked through.
- Remove the skillet from heat and stir in the sour cream until well combined.
- Serve over egg noodles or rice.
Notes
For added texture and nutrition, feel free to include vegetables like mushrooms or carrots. Serve with crusty bread to soak up the sauce.
