- Heat the olive oil in a large pan over medium heat. Add finely chopped onion and minced garlic, sautéing until softened and fragrant.
- Incorporate grated ginger, grated carrot, and diced bell pepper. Cook for an additional 3-4 minutes until the vegetables are tender.
- Add the chicken mince to the pan, breaking it apart with a spatula. Stir until the chicken is fully cooked and no longer pink.
- Pour in soy sauce, seasoning with salt and pepper. Mix thoroughly, cooking for another 5 minutes to meld flavors.
- Serve hot, garnished with fresh herbs. Enjoy as is or with side dishes of your choice.
Notes
You can spice it up with chili flakes or try different vegetables. Serve it over rice or in lettuce wraps.
