  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 carrots sliced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation
  1. Start by cutting the chicken breasts into bite-sized pieces. Season generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the seasoned chicken pieces to the skillet. Sauté until the chicken is browned on all sides, about 7-10 minutes.
  4. Once the chicken is cooked through, stir in the sliced carrots and cook for about 3 minutes. Then, add the frozen peas.
  5. Stir in the chicken broth, thyme, and paprika. Bring the mixture to a simmer, letting it cook uncovered for approximately 15 minutes until the broth reduces slightly.
  6. Taste and adjust seasoning as needed. If desired, sprinkle with fresh parsley for a pop of color and flavor.

Notes

For added spice, consider incorporating cayenne pepper or red pepper flakes. Fresh herbs can enhance the flavors, and for a creamy twist, stir in a splash of heavy cream. Leftover roasted chicken can be utilized for quicker prep.
