Main Ingredients
  • 2 cups cooked shredded chicken Using leftover or rotisserie chicken is recommended.
  • 1 cup cheese (cheddar or Mexican blend)
  • 12 small corn tortillas Traditional version uses corn tortillas.
  • as needed tablespoons vegetable oil for frying
  • to taste salt

Method
 

Preparation
  1. In a mixing bowl, combine the cooked shredded chicken with the cheese.
  2. Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds per side until they become pliable.
  3. Spoon a portion of the chicken mixture onto the center of each tortilla. Roll them tightly, securing the filling.
Cooking
  1. In a frying pan, heat enough vegetable oil over medium heat to cover the bottom.
  2. Carefully place the flautas in the hot oil, frying until golden brown and crispy on all sides, about 2-3 minutes per side.
  3. Once done, drain the flautas on paper towels to remove excess oil.
Serving
  1. Serve hot with lettuce, diced tomatoes, and salsa for dipping.

Notes

For a healthier option, bake flautas at 400°F (200°C) for 20-25 minutes instead of frying. Experiment with fillings like shredded beef or black beans to add variety.
