  • 1 kg chicken, cut into pieces
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
Spices and Seasoning
  • 4 tablespoons oil
  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala
  • Salt to taste
  • Fresh coriander for garnish

Method
 

Cooking
  1. Heat the oil in a large pot over medium heat. Once hot, add the cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  4. Add the chopped tomatoes and cook until softened, about 5 minutes.
  5. Mix in the coriander powder, turmeric powder, and salt, cooking for a minute.
  6. Add the chicken pieces and stir to coat them with the masala. Cook for 7-10 minutes or until browned.
  7. Pour in enough water to cover the chicken, bring to a gentle simmer, and cover. Cook for 30-40 minutes until the chicken is tender.
  8. After the chicken is done, stir in the garam masala and cook for an additional 5 minutes.
  9. Garnish with fresh coriander before serving.

Notes

Adjust the spice level by adding green chilies or cayenne pepper. For creaminess, consider adding coconut milk or yogurt. This dish can be served with basmati rice, naan, or a side salad.
