  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 8 oz chow mein noodles Cook according to package instructions.
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, snow peas) Fresh vegetables recommended for best texture.
  • 1/4 cup soy sauce Use low-sodium if preferred.
  • 2 tbsp oyster sauce Optional for added flavor.
  • 1 tbsp sesame oil Adds a nutty flavor.
  • 2 cloves garlic, minced Adjust quantity to taste.
  • 2 stalks green onions, chopped For garnish.
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the chow mein noodles according to the package instructions. Once cooked, drain them and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat, enough to coat the bottom of the pan.
  3. Add the minced garlic to the hot oil and stir-fry for about 30 seconds, allowing the garlic to become fragrant but not browned.
  4. Toss in the mixed vegetables and stir-fry for about 3-5 minutes until they are tender-crisp.
  5. Once the vegetables are cooked, add the shredded chicken to the skillet and mix well.
  6. Pour in the soy sauce and oyster sauce, stirring to coat all ingredients evenly.
  7. Add the cooked chow mein noodles to the pan and toss everything together, cooking for an additional 2-3 minutes until heated through.
  8. Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

To make it gluten-free, swap chow mein noodles for rice noodles or gluten-free soy sauce. Customize with different proteins or add spice for a kick.
