  • 500 g chicken breast, diced Use boneless pieces for convenience.
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 unit bell pepper, chopped Any color will work.
  • 2-3 units green chilies, chopped Adjust according to your spice preference.
  • 1 can diced tomatoes For moisture and richness.
  • 1 tablespoon chili powder Adjust for heat preference.
  • 1 teaspoon cumin
  • to taste Salt
  • 2 tablespoons oil Use vegetable or olive oil.
  • to taste Fresh cilantro for garnish Adds freshness.

Method
 

Preparation
  1. Heat oil in a pan over medium heat.
  2. Add chopped onion and garlic, and sauté until soft.
  3. Add the diced chicken and cook until browned, about 5-7 minutes.
  4. Stir in the bell pepper, green chilies, chili powder, cumin, and salt; cook for another 3-4 minutes.
  5. Add the can of diced tomatoes and mix well.
  6. Cover and allow to simmer for 15-20 minutes until the chicken is fully cooked.
  7. Garnish with fresh cilantro before serving.

Notes

Adjust the heat by controlling the amount of green chilies or chili powder used. This dish can also be made with tofu, shrimp, or beef for variations.
