Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, and salsa. Mix well.
- Grease a 9x13 inch baking dish.
Assembly
- Layer two flour tortillas at the bottom of the baking dish, cutting them to fit.
- Spread half of the chicken mixture over the tortillas, followed by a layer of cheese.
- Repeat the layering process with tortillas, chicken mixture, and cheese.
- Top with a final layer of tortillas and sprinkle remaining cheese on top.
Baking
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly.
Serving
- Let the casserole cool for a few minutes before serving warm with optional toppings.
Notes
This casserole can be made ahead and stored in the fridge. Reheat before serving.
