Ingredients
  

Main Ingredients
  • 2 cups cooked, shredded chicken Use leftover chicken for convenience.
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies Use with their juices.
  • 1 cup cooked rice (white or brown)
  • 1.5 cups shredded cheese (cheddar or Monterey Jack) For topping.
  • 1 packet taco seasoning
  • 1 cup salsa
  • 6 small flour tortillas Cut as needed to fit the dish.
Optional Toppings
  • sour cream For serving.
  • sliced green onions For serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, and salsa. Mix well.
  3. Grease a 9x13 inch baking dish.
Assembly
  1. Layer two flour tortillas at the bottom of the baking dish, cutting them to fit.
  2. Spread half of the chicken mixture over the tortillas, followed by a layer of cheese.
  3. Repeat the layering process with tortillas, chicken mixture, and cheese.
  4. Top with a final layer of tortillas and sprinkle remaining cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly.
Serving
  1. Let the casserole cool for a few minutes before serving warm with optional toppings.

Notes

This casserole can be made ahead and stored in the fridge. Reheat before serving.
