Ingredients
  

Main Ingredients
  • 1 whole whole chicken (or chicken parts) Using a whole chicken yields more flavor.
  • 4 quarts water
  • 1 medium onion, quartered
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, crushed
  • 1 leaf bay leaf
  • to taste salt and pepper Adjust based on personal preference.
  • to taste Fresh herbs (parsley, thyme, etc.) Optional; adds extra flavor.

Method
 

Preparation
  1. Place the chicken in a large pot and cover with water.
  2. Add the onion, carrots, celery, garlic, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for about 1-2 hours, skimming off any foam that rises to the surface.
  4. Once the chicken is cooked through, remove it from the pot and let it cool.
  5. Strain the broth through a fine mesh sieve to remove the solids.
  6. Season with salt and pepper and add fresh herbs if desired.
  7. Store in the refrigerator or freeze for later use.

Notes

For a richer flavor, roast the chicken first before simmering. You can also add other vegetables like leeks or mushrooms for different flavor profiles.
