Preparation
- Preheat the oven to 375°F (190°C).
- Place each chicken breast between two pieces of plastic wrap and pound them until they are about 1/4 inch thick.
- Generously season both sides with salt and pepper.
- Lay a slice of ham and a slice of Swiss cheese on each chicken breast.
- Starting from one end, roll each chicken breast tightly and secure it with toothpicks or kitchen twine.
- Dredge each roll in flour, dip into the beaten eggs, then coat with breadcrumbs.
Cooking
- In a large skillet, heat the oil over medium heat and brown the chicken rolls on all sides.
- Transfer the browned rolls to a baking dish and bake for 20-25 minutes or until cooked through.
- Let the rolls rest for a few minutes, then slice them into rounds and serve warm.
Notes
These rolls can be prepared in advance and stored in the refrigerator or freezer. Great to pair with salads, rice, or mashed potatoes.
