  • 2 pieces sweet oranges Use high-quality sweet oranges.
  • 2 tablespoons honey Adds sweetness to balance spices.
  • 1 pinch saffron For added flavor and color.
  • 2 tablespoons olive oil For cooking.
  • 1 large onion Chopped.
  • 3 cloves garlic Minced.
  • 1 teaspoon ground cinnamon For flavor.
  • 1 teaspoon ground cumin For flavor.
  • 1 teaspoon ground ginger For flavor.
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon pepper To taste.
  • 2 cups couscous For serving.

Method
 

Preparation
  1. Heat olive oil in a large pot or tagine over medium heat.
  2. Add chopped onions and minced garlic, sautéing until translucent.
  3. Add the chicken pieces and brown on all sides.
  4. Sprinkle in the ground spices (cinnamon, cumin, ginger), salt, and pepper.
  5. Pour in honey and juice from the sweet oranges, along with the saffron.
  6. Cover and let it simmer on low heat for about 1.5 to 2 hours until the chicken is tender.
Serving
  1. Serve Chicken and Orange Tagine hot, alongside a generous portion of fluffy couscous.
  2. Garnish the dish with fresh herbs, like cilantro or parsley, for extra flavor.

Notes

For a richer dish, sear the chicken well and consider adding almonds or dried apricots. If there are leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
