Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and optional garlic powder.
- In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown on both sides.
- Transfer the chicken to a baking dish and bake for about 20-25 minutes, or until fully cooked through.
- While the chicken is baking, peel and chop the potatoes.
- Place the potatoes in a pot of salted water and boil until tender, about 15-20 minutes.
- Once the potatoes are soft, drain and return to the pot.
- Add in the butter, milk, and season with salt and pepper to taste.
- Mash the mixture until you achieve your desired consistency.
Serving
- Plate the baked chicken alongside a generous scoop of mashed potatoes.
- Garnish with fresh herbs if desired.

For extra flavor, marinate the chicken in lemon juice and fresh herbs before cooking.
