Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Can be substituted with chicken thighs for richer flavor.
  • 2 tablespoons olive oil For searing the chicken.
  • Salt to taste Salt Enhances flavor.
  • Pepper to taste Pepper Enhances flavor.
  • Garlic powder (optional) For added flavor.
For the Mashed Potatoes
  • 4 large potatoes Russet or Yukon Gold recommended.
  • 2 tablespoons butter For creaminess.
  • 1/2 cup milk Adjust for desired creaminess.
  • Salt to taste Salt To taste when mashing.
  • Pepper to taste Pepper To taste when mashing.
  • Fresh herbs (optional) For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and optional garlic powder.
  3. In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown on both sides.
  4. Transfer the chicken to a baking dish and bake for about 20-25 minutes, or until fully cooked through.
  5. While the chicken is baking, peel and chop the potatoes.
  6. Place the potatoes in a pot of salted water and boil until tender, about 15-20 minutes.
  7. Once the potatoes are soft, drain and return to the pot.
  8. Add in the butter, milk, and season with salt and pepper to taste.
  9. Mash the mixture until you achieve your desired consistency.
Serving
  1. Plate the baked chicken alongside a generous scoop of mashed potatoes.
  2. Garnish with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken in lemon juice and fresh herbs before cooking.
