  • 1 pound chicken (boneless, skinless)
  • 4 cups chicken broth
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 1 cup onion (diced)

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter (melted)
  • 1 teaspoon dried thyme

Preparation
  1. In a large pot, combine the chicken and chicken broth. Bring to a boil. Once boiling, reduce the heat and let it simmer until the chicken is cooked through, about 20 minutes. Remove the chicken, shred it with two forks, and set aside.
  2. In the same pot, add the diced carrots, celery, and onion to the broth. Allow them to soften and cook until tender, which takes about 10 minutes.
Making the Dumplings
  1. Prepare the dumplings: In a mixing bowl, combine the flour, baking powder, salt, and dried thyme. Stir in the milk and melted butter until the ingredients are just combined. The batter will be a bit lumpy, which is perfect.
  2. Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and let the dumplings cook for 15 to 20 minutes until they are firm and cooked through.
Finishing Touches
  1. Return the shredded chicken to the pot, stirring gently to combine. Season with salt and pepper to taste. Serve hot and enjoy the comforting flavors!
