  • 2 cups cooked chicken, shredded Can use leftover chicken
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup
  • 1 cup chicken broth Use low sodium if preferred
  • 1 package stuffing mix Any flavor or brand that you like
  • 1/4 cup butter, melted Can substitute with olive oil for a lighter option
  • 1 cup celery, chopped For added crunch and flavor
  • 1 cup onion, chopped Can use yellow or white onion
  • to taste pinch Salt
  • to taste pinch Pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, chicken broth, chopped celery, diced onion, and season with salt and pepper to taste. Mix well until all ingredients are fully combined.
  3. In another bowl, combine the stuffing mix with the melted butter. Ensure all the stuffing is coated evenly with butter.
  4. Layer the chicken mixture evenly in a greased casserole dish.
  5. Top the chicken layer with the stuffing mixture, spreading it out evenly.
Cooking
  1. Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.
  2. Remove the foil and continue baking for an additional 15 minutes until the top is golden brown and crispy.

Notes

This recipe can be customized with vegetables and seasonings of your choice. Great for using leftover chicken!
