Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, combine olive oil, garlic powder, paprika, oregano, salt, and pepper.
- Pat the chicken breasts dry and coat them evenly with the spice mixture.
Assembly
- In a baking dish, place the seasoned chicken breasts.
- Scatter the halved cherry tomatoes, fresh spinach, and lemon slices around the chicken.
Cooking
- Place the dish in the preheated oven and roast for about 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Once done, remove from the oven and let the chicken rest for a few minutes.
- Garnish with fresh herbs before serving.
