  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste Salt

Vegetable Garnish
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 piece lemon, sliced
  • Fresh herbs for garnish (such as parsley or basil)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, garlic powder, paprika, oregano, salt, and pepper.
  3. Pat the chicken breasts dry and coat them evenly with the spice mixture.
Assembly
  1. In a baking dish, place the seasoned chicken breasts.
  2. Scatter the halved cherry tomatoes, fresh spinach, and lemon slices around the chicken.
Cooking
  1. Place the dish in the preheated oven and roast for about 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  2. Once done, remove from the oven and let the chicken rest for a few minutes.
  3. Garnish with fresh herbs before serving.
