Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Reserve about half a cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook the chicken for about 6-7 minutes on each side until fully cooked and golden brown. Remove from skillet and let it rest before slicing.
Sauce Preparation
  1. In the same skillet, melt butter and add minced garlic. Sauté for about 1 minute until fragrant. Stir in the heavy cream and chicken broth, bringing the mixture to a simmer.
  2. Gradually add the mozzarella, parmesan, and cheddar cheese, stirring continuously until melted and smooth.
Combine and Serve
  1. Cut the cooked chicken into bite-sized pieces and return it to the skillet along with the cooked rotini. Stir everything together, adding reserved pasta water as needed to achieve your desired consistency.
