  • 1 lb chicken breast, diced
  • 1 cup cashews For crunch and flavor
  • 1 bell pepper, chopped Can use any color
  • 1 onion, chopped
  • 2 cloves garlic, minced For added flavor
  • 1/4 cup soy sauce Low sodium option can be used
  • 2 tbsp oyster sauce Can be substituted with hoisin sauce for vegetarian option
  • 1 tbsp cornstarch For thickening the sauce
  • 2 tbsp vegetable oil For frying
  • Salt and pepper to taste

  1. Start by heating the vegetable oil in a large pan or wok over medium heat.
  2. Add the diced chicken to the pan and cook it until it turns golden brown, about 5-7 minutes.
  3. Once browned, introduce the chopped onion, bell pepper, and minced garlic into the pan. Sauté them together until the vegetables become tender, usually around 3-4 minutes.
  4. In a separate bowl, whisk together the soy sauce, oyster sauce, cornstarch, and a small splash of water to create a smooth sauce mix.
  5. Pour the sauce over the chicken and vegetables, ensuring everything is well coated. Stir-fry for another 2 minutes.
  6. Add the cashews to the mixture and continue to stir-fry for an additional 2-3 minutes. Make sure the cashews are evenly distributed.
  7. Season the dish with salt and pepper according to your taste.
  8. Serve hot, preferably over a bed of fluffy rice for an enjoyable meal.

Notes

Consider adding broccoli or snap peas for extra vegetables; adjust the heat by adding red pepper flakes if desired.
