  1. Wash the carrots thoroughly to remove any dirt. Peel them using a vegetable peeler, creating long, thin ribbons. If the ribbons are too long, cut them into shorter, bite-sized pieces.
  2. In a medium-sized bowl, combine the olive oil, lemon juice, salt, and pepper. Whisk the ingredients together until well blended. Adjust seasoning to taste.
  3. In the bowl with the dressing, add the carrot ribbons and toss gently to ensure they are well coated.
  4. Transfer the dressed carrot ribbons to a serving platter and garnish with fresh herbs. Serve immediately.

Notes
