Ingredients

Main ingredients
  • 4 pieces boneless chicken breasts
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 cup pineapple chunks (fresh or canned)
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a medium-sized bowl, combine the brown sugar, soy sauce, minced garlic, and grated ginger. Whisk until well mixed.
  3. Place the boneless chicken breasts into a baking dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  4. Scatter the pineapple chunks around the chicken in the baking dish.
  5. Drizzle olive oil over the chicken and pineapple. Sprinkle with salt and pepper.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. Remove from the oven, garnish with chopped green onions, and serve warm.

Notes

For best results, marinate the chicken for at least an hour or overnight. Consider grilling the chicken for added smoky flavor. Leftovers can be stored in an airtight container for up to three days.
