- In a large bowl, combine bourbon, soy sauce, brown sugar, garlic, and ginger. Stir well until the sugar is dissolved.
- Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
Cooking
- Heat the vegetable oil in a skillet over medium heat.
- Add the seasoned chicken to the skillet and cook until browned and fully cooked through, about 5 to 7 minutes.
- Pour the bourbon mixture over the cooked chicken, reduce the heat to low, and let it simmer for 15-20 minutes. Stir occasionally until the sauce thickens.
Serving
- Garnish with chopped green onions just before serving.

Notes
For more depth of flavor, marinate the chicken in the sauce for at least 30 minutes before cooking. If you prefer a spicier kick, add red pepper flakes or a dash of hot sauce to the sauce mixture. You can substitute chicken thighs for chicken breast if you prefer white meat; however, thighs tend to be juicier. Try adding vegetables like bell peppers or broccoli for added nutrition and flavor. For a gluten-free version, replace soy sauce with tamari or coconut aminos.
