  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

  1. In a large mixing bowl, combine the shredded green cabbage, purple cabbage, carrots, and diced red bell pepper. Stir gently until thoroughly mixed.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until you achieve a smooth consistency.
  3. Pour the dressing over the vegetable mixture. Toss everything together until the vegetables are coated well in the dressing.
  4. If desired, sprinkle in some chopped fresh herbs for added flavor and color, then mix gently.
  5. Cover the coleslaw and let it refrigerate for at least 30 minutes before serving.

Notes

For added crunch, consider adding chopped nuts like almonds or walnuts. For a spicy kick, add a pinch of cayenne pepper or a drizzle of hot sauce. You can also add fresh fruits like pineapple or apple for contrasting sweetness. Avoid reheating; coleslaw is best enjoyed cold and fresh.
