  • 1 cup granulated sugar

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted and cooled
  • Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour an 8-inch round cake pan or line it with parchment paper.
  3. In a large mixing bowl, combine the eggs and granulated sugar. Beat on high speed for about 5-7 minutes until thick and pale.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  6. Gently fold the dry mixture into the egg and sugar mixture using a spatula.
  7. Drizzle the melted butter over the batter and fold it in until fully incorporated.
Baking
  1. Carefully pour the batter into the prepared cake pan, smoothing the top.
  2. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  4. Dust the top with powdered sugar before slicing to serve, if desired.

Notes

For added flavor, consider folding in a pinch of lemon zest or almond extract. You can also create a layered dessert or make variations like chocolate sponge by adding cocoa powder.
