For the Beef Tenderloin
  • 1 whole beef tenderloin (about 4-5 pounds) Make sure to trim any excess fat.
  • 2 tablespoons olive oil For the rub.
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 cup beef broth For making the sauce.
  • 2 tablespoons butter To enhance the sauce.

Method
 

Preparation and Roasting
  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine olive oil, minced garlic, salt, pepper, rosemary, thyme, and Dijon mustard to create a flavor-packed rub.
  3. Rub the mixture all over the beef tenderloin, ensuring it is well coated for maximum flavor.
  4. Place the seasoned beef in a roasting pan and roast for about 25-30 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Remove the beef from the oven and allow it to rest for 15-20 minutes.
Making the Sauce
  1. While the beef is resting, deglaze the roasting pan with beef broth, scraping up any browned bits for extra flavor.
  2. Stir in butter until melted and well combined with the sauce.
Serving
  1. Slice the beef tenderloin against the grain and serve it on a platter, topped with the sauce.

Notes

For deeper flavor, marinate the meat overnight. Use a meat thermometer for perfect cooking. Experiment with herbs and serve alongside sides like garlic mashed potatoes or a fresh salad.
