Preparation
- Place the sliced onions and minced garlic at the bottom of the crockpot.
- Season the beef roast generously with salt, pepper, and thyme, rubbing the spices into the meat.
- Position the seasoned roast over the onion and garlic mixture.
- Add the chopped carrots and diced potatoes around the roast.
- In a separate bowl, combine the beef broth and Worcestershire sauce, then pour this mixture over the roast and vegetables.
- Cover the crockpot and set it to cook on low for 8-10 hours or high for 4-6 hours until the beef is tender.
- Once cooking time is up, serve the roast hot and enjoy.
Notes
For thicker gravy, remove the meat and mix in a cornstarch slurry before serving. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
