  • 3-4 lbs beef roast Choose a cut like chuck roast or brisket for best results.
  • 1 piece onion, sliced
  • 4 cloves garlic, minced
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, diced
  • 2 cups beef broth Can substitute with chicken or vegetable broth.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme Fresh or dried can be used.
  • Salt and pepper to taste

Method
 

Preparation
  1. Place the sliced onions and minced garlic at the bottom of the crockpot.
  2. Season the beef roast generously with salt, pepper, and thyme, rubbing the spices into the meat.
  3. Position the seasoned roast over the onion and garlic mixture.
  4. Add the chopped carrots and diced potatoes around the roast.
  5. In a separate bowl, combine the beef broth and Worcestershire sauce, then pour this mixture over the roast and vegetables.
  6. Cover the crockpot and set it to cook on low for 8-10 hours or high for 4-6 hours until the beef is tender.
  7. Once cooking time is up, serve the roast hot and enjoy.

Notes

For thicker gravy, remove the meat and mix in a cornstarch slurry before serving. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
