Preparation
- In a large pot, heat the olive oil over medium heat.
- Add the beef chunks and brown on all sides (5-7 minutes).
- Remove the beef and set it aside.
- In the same pot, sauté the diced onion and minced garlic until softened (2-3 minutes).
- Add the diced tomatoes, beef broth, sliced carrots, diced potatoes, paprika, cumin, and the browned beef back into the pot.
- Stir thoroughly to combine all ingredients and season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and cover the pot.
- Let it simmer for 1.5 to 2 hours or until the beef is fork-tender.
Serving
- Serve hot over rice or with crusty bread.
Notes
For a spicier version, add cayenne pepper or chili peppers. This dish can also be prepared in a slow cooker for a set-it-and-forget-it option.
