  • 1.5 lbs beef chuck, cut into chunks Preferred cut for tenderness
  • 2 tablespoons olive oil For browning the beef
  • 1 large onion, diced Adds sweetness and depth of flavor
  • 2 cloves garlic, minced For aromatic flavor
  • 2 cups diced tomatoes Canned or fresh
  • 2 cups beef broth Can substitute with vegetable broth
  • 2 medium carrots, sliced For sweetness
  • 2 medium potatoes, diced Adds heartiness
  • 1 tablespoon paprika For flavor and color
  • 1 teaspoon cumin Adds warmth
  • Salt and pepper to taste Essential seasoning
  • Rice or bread for serving To soak up the sauce

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef chunks and brown on all sides (5-7 minutes).
  3. Remove the beef and set it aside.
  4. In the same pot, sauté the diced onion and minced garlic until softened (2-3 minutes).
  5. Add the diced tomatoes, beef broth, sliced carrots, diced potatoes, paprika, cumin, and the browned beef back into the pot.
  6. Stir thoroughly to combine all ingredients and season with salt and pepper.
  7. Bring the mixture to a boil, then reduce heat and cover the pot.
  8. Let it simmer for 1.5 to 2 hours or until the beef is fork-tender.
Serving
  1. Serve hot over rice or with crusty bread.

Notes

For a spicier version, add cayenne pepper or chili peppers. This dish can also be prepared in a slow cooker for a set-it-and-forget-it option.
