  • 2 pieces ripe bananas The riper the bananas, the sweeter the bars will be.
  • 2 cups rolled oats Use certified gluten-free oats if necessary.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/2 cup peanut butter or almond butter Can substitute with other nut butters based on preference.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • 1/4 cup chocolate chips or nuts Optional add-ins for texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper for easy removal.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, cinnamon, honey or maple syrup, peanut butter, and vanilla extract to the mashed bananas. Stir until everything is well combined.
  4. If desired, fold in the chocolate chips or nuts.
  5. Spread the mixture evenly in the prepared baking dish and press down firmly.
Baking
  1. Bake for about 20-25 minutes or until the edges turn golden brown and the center feels firm.
  2. Allow the bars to cool completely in the pan before slicing them into squares.

Notes

Store leftover bars wrapped in plastic wrap or in an airtight container. They can be kept at room temperature for up to 3 days or refrigerated for about a week. For longer storage, freeze individually wrapped bars for up to 3 months.
