Ingredients
  

For the taco filling
  • 2 cups cooked shredded chicken Can use grilled or boiled chicken.
  • 1 cup salsa Choose your preferred type.
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Can adjust based on spice preference.
  • 8 pieces taco shells Can use whole wheat for a healthier option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with different cheese blends.
For serving
  • toppings: Lettuce, tomato, avocado, sour cream Optional toppings for customization.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked shredded chicken, salsa, black beans, corn, cumin, and chili powder.
  3. Carefully fill each taco shell with the chicken mixture and arrange in a baking dish.
  4. Sprinkle the shredded cheese over the top of the filled taco shells.
Baking
  1. Place the baking dish in the preheated oven and bake for about 15-20 minutes until the cheese is bubbly and golden.
  2. Remove from the oven and add desired toppings before serving.

Notes

Consider using grilled chicken for added flavor. Adjust spices as desired. For a vegetarian option, substitute chicken with sautéed mushrooms or crumbled tofu.
